Freezing, drying foods

A short while ago I dug out a food dehydrator that I had bought years ago and never used. Now that I have a garden and a few fruits and vegetables, I cleaned it up and have been experimenting with drying a bunch of produce. Between that and freezing, I've preserved the following:
  • carrots (chopped-dried, and shredded blanched and frozen)
  • apples (dried)-no painstaking slicing, just food processor prep
  • bananas (dried)
  • onions (dried and blanched and froze)
  • grapes (dried into yummy raisins)
  • mushrooms (dried)
  • nectarines (dried)
  • tomatoes (dried in rings, blanched and frozen whole)
  • green peppers (froze and dried)
  • red peppers (froze)
  • yellow peppers (froze)
  • mashed potatoes & yogurt (froze)
I have shredded carrots in the dryer now, and a countertop full of apples, with more apples coming soon.  I'll core them and cook them into applesauce with some cinnamon and then freeze it. I tell you, you get a bunch of one thing and when it dries, it seems like it is half the quantity.

I'm contemplating how I can use these dried foods for gifts for Christmas. Any ideas?

Here's where I'm coming from. I'm in my 50's, Female, single. I only have a few friends, and family. I'm broke most of the time, as I overspend my income--not on frivolous things, but on just living. I have 7 animals to support, no kids. I've never been much for gift giving, if at all. Usually not at all. Maybe a card here or there, but that's about it. I'm not close to anyone enough for gift giving. Plus, I think it's a waste of money to buy someone something they don't want, just because a gift is socially expected. On the other hand, I do like to give things to people who appreciate what I have to give, and that means something home-made given to specific individuals. I have dried foods now, and I can use them for Christmas gifts, but I'm just not sure how to put it all together. I don't want to make some sugar-laden fruitcake or anything (see my post on "Sugar Free Eating"). I need ideas. Low cost ideas.

I'm going to experiment with freezing or drying food combinations soon. Like, I mashed some potatoes up with yogurt (only the greek yogurt is sugar free) and froze it. Need more of those combinations for things I can take to work for lunches. Yes, I eat and love meat.
